Yude Azuki or cooked sweet Japanese azuki beans, also known as anko, are mainly used for Japanese desserts.
This Yude Azuki from Imuraya is made with 100% Hokkaido red beans, sugar and salt.
The raw red azuki beans are slowly cooked with water, sugar and salt until they become soft, tender and aromatic. These beans are then mashed into anko (sweet red bean paste) in either koshian (smooth) or tsubuan (chunky) varieties.
This can contains pre-made, ready-to-eat anko, and the small size is perfect for making sweet treats at home.
Yude Azuki is used among other things to make Japanese classics such as zenzai, oshiruko, dorayaki and taiyaki. It is also excellent as a filling for cakes and mochi or as a topping on pancakes and ice cream.
