A sweet-and-sour sauce is a classic of Asian cuisines. What sounds like the name of a particular sauce is actually an umbrella term covering a wide range of different sauces that all have in common that they are made from both something sweet and something sour. In Denmark it has primarily been pickled ingredients that have contributed a sour-and-sweet element to food, whereas in many Asian countries there has long been a tradition of combining sour and sweet. It is especially in Chinese cuisine—traces go back to the Tang dynasty, which ruled from 618 to 907—where menus included sweet-and-sour dishes. Fish sauce is made from either krill or fish that are salted and fermented for up to two years, and then boiled down into the sauce we know. Some producers add caramel or similar ingredients to achieve the right brown color. Fish sauce contributes a distinct umami flavor to food, and usually only a few drops are used at a time. The taste of the sauce is very intense, and so is the smell.
