Dashi Preparation Instructions:
1. In a pot, boil 500 ml of water.
2. When the water boils, add 20 g bonito flakes. Let them simmer for about 30 seconds to 1 minute. Then turn off the heat.
3. Let the bonito flakes steep in the water for an additional 3-5 minutes so the flavor infuses well.
4. Pour the dashi stock through a fine-mesh sieve or cheesecloth to remove the bonito flakes. You can gently press the flakes to extract the last bit of flavor.
Your dashi stock is now ready to use! It can be used immediately in recipes or stored in the refrigerator for up to a few days. Dashi can also be frozen in small portions for easy use later.
