Soba noodles are buckwheat noodles that form the basis of many dishes in Japanese cuisine and can be enjoyed both cold and hot. Soba noodles are light and fresh and are often enjoyed with a sauce on the side when served cold. They are very well suited for preparing soups, stews and cold salads.
Preparation:
Boil the noodles in plenty of boiling water for about 4 minutes and then rinse well with cold water. Serve cold or hot.
