Preparation:
Rinse the rice 2–3 times with cold water, stirring, to wash off the starch. Use 3 parts water to 2 parts rice and bring to a boil, then reduce to low heat for 10 minutes. Then the rice is ready. Fried rice: Let the rice sit in the refrigerator overnight before use. Steam rice: Soak uncooked rice for a couple of hours, then place the rice in a steamer basket lined with a thin cloth and steam on high for 20 minutes.
