Fish sauce is an essential liquid seasoning in Southeast Asia and has a strong smell of fish. However, don't be put off, as it evaporates in hot dishes and only leaves its aromatic salty umami flavor. Fish sauce can be used instead of salt in Thai cuisine.
For a dressing: Mix 10 parts water with 1 part fish sauce, sugar, lime and chili. The mixture should taste sour, sweet, salty and spicy.
