This waxy corn is a very special corn variety that differs markedly from ordinary sweet corn. The kernels have a unique, slightly chewy and sticky texture that gives a different mouthfeel than crispy sweet corn. The flavor is mild, naturally sweet with a nutty undertone, making it suitable for many different dishes.
Preparation is simple: boil or steam the kernels for 5–7 minutes, until tender but still firm and slightly chewy. Waxy corn can also be lightly sautéed in a pan with a little oil and spices to enhance the flavor and add extra bite. It is ideal as a side dish, in soups, stir-fries, or as a tasty and unusual snack.
