Fermented tofu, also called bean cheese or tofu cheese, is a very tasty, aromatic and highly unique tofu sauce from China. The fermented tofu is used in many recipes and it gives a fantastic umami flavor to everything you add it to.
Fermented tofu is not used as a main protein, but as a flavoring or seasoning. The taste is mostly salty, subtly sweet and slightly cheesy. This version is spiced with chili for an extra kick. It has a texture that resembles creamy cheese.
Fermented red tofu is mostly used for marinades, sauces and braised meat dishes. It is, among other things, one of the main ingredients in the marinade for Char Siu (Chinese BBQ pork).
Store in the refrigerator after opening, and always use clean utensils to prevent contamination. If it is constantly refrigerated and handled in a sterile manner, it can keep for a year or more. However, it is best if consumed within three months.
