This type of pickled Chinese radishes, called fukujinzuke in Japanese, is named after the seven lucky gods in Japanese mythology.
Fukujinzuke is a staple in many traditional dishes and is commonly used as a condiment for Japanese curry to add extra flavor and a bit of crunch. It can also be used as a side for any Japanese meal or as an ingredient in onigiri rice balls.
This fukujinzuke is made from Japanese radish, eggplant and cucumber, seasoned with acidity, salt and sweetness, as well as ginger, shiso leaf and sesame.
