  • 100 g gai lan (Chinese broccoli) or kale, cut into pieces
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp sugar
  • 1 tsp black pepper

Pad See Ew sauce

  • 2 tbsp oyster sauce
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp sugar (preferably brown sugar)
  • A pinch of black pepper

Instructions

  1. Soak the rice noodles in warm water for about 10-15 minutes, until they are soft but still have bite. Drain and set aside.
  2. Mix the ingredients for the Pad See Ew sauce in a bowl until the sugar is completely dissolved. Adjust the seasoning to taste.
  3. Heat the oil in a large frying pan or wok over medium-high heat. Add the garlic and cook until fragrant, about 30 seconds.
  4. Add the chicken or pork and stir-fry until the meat is golden and cooked through.
  5. Push the meat to the side of the pan, crack in the eggs and scramble them until cooked and slightly creamy.
  6. Add the soaked rice noodles and pour the Pad See Ew sauce over them. Toss the noodles gently so they are evenly coated with the sauce and caramelized.
  7. Add the gai lan or kale, and stir-fry for another 2-3 minutes, until the greens are tender.
