  • 300 g peanuts, shelled and halved
  • 150 g rice or chickpea flour
  • 2 tbsp cornstarch
  • 3 dl coconut milk
  • 3 cloves garlic, finely chopped
  • 2 tsp coriander seeds, toasted
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp salt
  • Olive oil for frying
  • Fresh chili or chili powder to taste (optional)

Method

  1. Combine rice or chickpea flour, cornstarch, coriander seeds, cumin, turmeric and salt in a bowl. Add the coconut milk a little at a time while stirring until you have a smooth, thin batter.
  2. Stir the finely chopped garlic and, if using, chili into the batter so the flavors are evenly distributed.
  3. Heat a generous amount of oil in a deep frying pan or pot over medium heat.
  4. Carefully dip a teaspoonful of the mixture into the oil to test the temperature — the batter should start to sizzle and bubble immediately.
  5. Add a small handful of peanuts to the batter and take a spoonful of the batter with peanuts. Pour or shape it into a thin disc in the hot oil.
  6. Fry the rempeyek discs for 2–3 minutes on each side, or until golden and crispy. Be sure to turn them gently with tongs.
  7. Drain the rempeyek discs on kitchen paper to remove excess oil.

Tips for Variations
