It is aged in 100-year-old barrels on a small island in Japan's Inland Sea. The sauce is fermented for 1 year in cedar barrels. The soy sauce is made from premium fully-steamed soybeans, roasted wheat, salt and mineral water.
It has a soft and balanced taste with a somewhat fuller flavor than most soy sauces. Rich on the palate, with a salinity that supports rather than overwhelms its many layers of flavor. Traditionally brewed soy is a fermented soy food, so it shares many of the same nutritional properties. The natural fermentation process converts soy proteins, starches and fats into easily absorbable amino acids, simple sugars and fatty acids.
