Perilla, also known as Tía Tô in Vietnamese and Shiso in Japanese, is an herbaceous plant that belongs to the mint family. It is also known as Chinese leaf mint in Danish.
This aromatic herb is an indispensable ingredient in many Asian cuisines, especially in Vietnamese and Japanese cuisine.
Vietnamese Tía tô are two-coloured, with leaves that are red/purple on the underside. The leaves add not only a beautiful color to your dishes, but also a unique, complex flavor profile with notes of anise, basil and mint.
In Vietnam Tía tô is a common ingredient in dishes such as pho (noodle soup) and gỏi cuốn (fresh spring rolls). The leaves are often used as part of an herb platter served with pho, so diners can add them to taste.
Tía tô is also added to salads, soups, stir-fried dishes and stews to give extra flavor and aroma.
They can also be pickled or eaten as a garnish with bún (rice vermicelli).
In Japan shiso is often used as a garnish or wrapping for sushi and sashimi. The green variety is more common, but the purple is also used to color and flavor pickled products such as umeboshi (pickled plums).
Shiso can also be finely chopped and mixed into salads or used as a topping for tofu and other dishes.
In Korea perilla is often used to make a popular banchan (side dish), where the leaves are marinated in a mixture of soy sauce, garlic, sesame oil and chili. This creates an aromatic and flavorful dish that is served with rice and other main dishes.
In China perilla is also used, especially in Sichuan cuisine. The leaves can be used in stir-fry dishes or as a flavoring in soups.
