Enoki mushrooms are a popular mushroom in Chinese and Japanese cuisine. The whole mushroom, stem and cap, is used in cooking, and it has a very mild, nutty flavor.
Enoki can be used in soups, stir-fries, hot pot, fried, as a filling in dumplings or deep-fried as a snack. Enoki can be used like other mushrooms. They should preferably be added at the very end, as they become tough with prolonged heating.
Enoki mushrooms should not be eaten raw. Boil, bake, deep-fry or briefly braise them to preserve their firmness and flavor.
Usage:
Cut 1-2cm off the base and gently separate the stems. Avoid rinsing the mushrooms, as they will lose texture and flavor. Wipe off any soil with a piece of kitchen paper. Heat them to over 70°C for at least 3 minutes. Enoki mushrooms should not be eaten raw.
