Chinese chives are an aromatic herb with flat, green leaves and a mild flavor reminiscent of a mix of garlic and chives. They are widely used in Asian cuisine – especially in Thai, Japanese, Chinese and Korean dishes – where they add freshness and depth to dishes such as stir-fries, soups, egg dishes and dumplings. Chinese chives should be rinsed thoroughly and cut into smaller pieces, and they can be lightly sautéed, added to hot dishes just before serving or used raw as a topping. In Japan they are known as nira and are often used in classic dishes such as gyoza and nira-tamago. Suitable for both cold and hot dishes.
