Kombu seaweed, also called kelp or dasima, is a type of dried seaweed known for its rich umami flavor. The seaweed is an indispensable ingredient in Asian cuisine, and is used mainly to make the classic soup stock called "Dashi".
The seaweed provides a depth of flavor that is difficult to achieve with other ingredients. It imparts salt, a little sweetness and above all a lot of umami, which in combination with f.eks. dried shiitake mushrooms or katsuobushi (bonito flakes) results in a super flavorful base for your dishes.
