Agar Agar is a plant-based gelatin alternative extracted from red algae and is ideal for vegan and vegetarian recipes. These Agar Agar Stænger fra Eaglobe are ideal for creating authentic Asian gels, desserts, and for thickening soups and sauces or in Asian salads. Its strong gelling power and neutral flavor make it a perfect choice for all types of dishes where consistency and presentation are the focus.
Usage:
For gelling:
1. Start by softening the Agar Agar sticks in cold water for about 20-30 minutes. This makes them soft and easier to dissolve.
2. After soaking, drain the water and cut the sticks into smaller pieces. Add the softened sticks to the liquid you want to gel (f.eks. water, juice, broth). Use about 10 grams of Agar Agar sticks per liter of liquid for a firm gel.
3. Bring the mixture to a boil while stirring constantly to ensure that the Agar Agar sticks dissolve completely and you avoid lumps.
4. When the Agar Agar sticks are completely dissolved, pour the mixture into the mold or bowl where you want to make the gel. Let it cool at room temperature, and then you can place it in the refrigerator to ensure it gels properly.
- Agar Agar begins to set at around 32-40°C and becomes fully firm at room temperature. It typically takes 1-2 hours to set completely, depending on the recipe and quantity.
For salads:
1. Cut the Agar Agar sticks into 5 cm long pieces, and soak them in lukewarm water for about 30 minutes.
2. Rinse them in clean water and squeeze out the excess water.
3. They are then ready to be mixed with other types of seaweed such as wakame for a seaweed salad, or possibly with freshly shredded salad greens and sesame dressing.
