Anseong Matchum is a premium Korean short-grain rice with a sticky and airy texture, reminiscent of Japanese sushi rice. It is ideal for traditional Korean dishes such as kimbap – a rice roll filled with vegetables, meat, or fish, as well as for bibimbap, rice balls, and other classic Korean meals where the rice's texture and flavor play a central role. Due to its similarity to Japanese rice, it can also be used in Japanese cuisine.
This rice is usually mixed with sesame oil and salt, and not with vinegar like Japanese sushi rice.
