Ingredients for boba pearls
- 100 g tapioca flour
- 50 g water
- 2 tbsp brown sugar
- Extra water for boiling
- Brown coloring or black tea (optional for color)
Instructions for boba pearls
- Combine water and brown sugar in a small saucepan and bring it to a boil. If you want colored pearls, you can add brown coloring or a strong brew of black tea to the liquid.
- Pour the hot sugar water over the tapioca flour a little at a time, stirring with a spoon, until it forms a sticky dough. If the dough is too dry, add a bit more hot water.
- Divide the dough into small pieces and roll them into small balls (approx. 0.5 cm in diameter). You can dust a little tapioca flour on your hands to prevent sticking.
- Bring a large pot of water to a boil, and gently add the boba pearls. Cook for about 15–20 minutes, depending on the size of the pearls, until they are cooked through and float to the surface.
- Turn off the heat and let the boba pearls steep for another 15 minutes in the hot water. This gives them the proper chewiness.
- Drain the pearls and rinse them briefly under cold water to remove excess starch. Then dip them into a small amount of sugar water to prevent them from sticking together.
