- 200 g thick egg noodles
- 2 tbsp oil
- 3 cloves garlic, finely chopped
- 1 onion, thinly sliced
- 200 g chicken breast or shrimp, cut into smaller pieces
- 2 eggs
- 100 g napa cabbage, cut into strips
- 2 tbsp soy sauce
- 1 tbsp sweet soy sauce (kecap manis)
- 1 tsp sambal oelek (adjust to taste)
- 1 tsp sugar
- Salt and pepper to taste
- Fresh cilantro and fried onions for garnish
- Lemon wedges for serving
Method
- Cook the egg noodles according to the package instructions until tender but still firm. Drain and set aside.
- Heat the oil in a large wok or frying pan over medium heat. Add the garlic and onion, and sauté until soft and fragrant.
- Add the chicken or shrimp, and cook until fully done.
- Push the filling to one side of the wok, crack the eggs into the empty side, and stir until they become scrambled eggs.
- Add the napa cabbage, soy sauce, sweet soy sauce, sambal oelek and sugar. Mix well.
- Add the cooked noodles and gently toss so they are evenly combined with the other ingredients. Season with salt and pepper to taste.
