• 200 g glass noodles
• 2 tbsp sesame oil
• 3 cloves garlic, finely chopped
• 1 red chili, finely chopped (adjust to taste)
• 100 g carrots, julienned
• 50 g sugar snap peas, sliced into strips

• 4 spring onions, sliced
• 2 tbsp soy sauce

Instructions for glass noodle recipe

1. Prepare the glass noodles by placing them in a bowl of warm water. Let them soak for about 10 minutes, until soft. Drain and set aside.
2. Heat the sesame oil in a large pan or wok over medium heat. Add the garlic and chili, and sauté for about 1 minute, until the garlic is fragrant.
3. Add the carrots, sugar snap peas and bell pepper, and stir-fry for another 3-4 minutes so the vegetables still have a crisp texture.
4. Add the spring onions and glass noodles to the pan. Pour over the soy sauce and rice wine vinegar, and toss until the noodles are well coated and heated through.
5. Remove the pan from the heat, and plate the glass noodles. Garnish with fresh cilantro and serve with lime wedges.

Tips for the glass noodle recipe

This glass noodle recipe can be easily adapted. Add chicken, shrimp or tofu for extra protein, or create a spicy variation by adding more chili or a tablespoon of sambal oelek. Glass noodles are also great as a cold salad when combined with a light vinaigrette and fresh vegetables.
