- 400 ml coconut milk
- 200 g sugar
- 1/4 tsp salt
- 2 large ripe mangoes, peeled and sliced
- 1 tbsp toasted sesame seeds (optional)
Method
- Start by rinsing the glutinous rice thoroughly in cold water until the water runs clear. Soak the rice for at least 4 hours or overnight for the best texture.
- After soaking, steam the rice for 20–25 minutes, until tender. A bamboo steamer is preferred for the most authentic method, but a regular steamer can also be used.
- While the rice is steaming, pour the coconut milk into a saucepan over medium heat. Add the sugar and salt, and stir until the sugar dissolves. Let it simmer gently, but avoid boiling.
- When the rice is cooked, pour half of the coconut milk mixture over the rice in a large bowl. Cover the bowl with a lid or a damp cloth, and let it sit for 30 minutes so the rice can absorb the milk.
- To serve, shape a portion of sticky rice on each plate, and arrange slices of mango on top or beside the rice. Pour the remaining coconut milk over the rice.
