- 200 g mock duck (can be bought canned or at Asian specialty stores)
- 2 tbsp oil
- 3 cloves garlic, finely chopped
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 2 spring onions (scallions), sliced
- 100 g bean sprouts
- 50 g cashews
- Fresh cilantro for garnish
- Cooked jasmine rice for serving
Mock Duck sauce
- 3 tbsp soy sauce
- 2 tbsp oyster sauce (vegetarian version)
- 1 tbsp brown sugar
- 1 tsp chili flakes
- 2 tbsp water
Method
- Drain the mock duck and cut it into bite-sized pieces.
- Mix all the ingredients for the sauce in a bowl until the sugar has dissolved.
- Heat the oil in a large pan or wok over medium heat. Add the garlic and cook for one minute until fragrant.
- Add the mock duck pieces and fry until well browned.
- Add the bell pepper strips and cook for a further 2–3 minutes.
- Pour the sauce over the mock duck and vegetables, and let it simmer for 2 minutes until the sauce has thickened.
- Add the spring onions, bean sprouts and cashews, and toss everything together.
- Remove the pan from the heat, garnish the dish with fresh cilantro, and serve immediately with cooked jasmine rice.
Tips for mock duck recipe
For extra flavor you can add a splash of fresh lime juice and a sprinkle of toasted sesame seeds just before serving. If you want a gluten-free version, make sure to use gluten-free soy sauce and oyster sauce.
