Mock duck is a popular vegetarian alternative to traditional duck dishes and is especially loved for its authentic texture and flavor. This recipe guides you step-by-step to make a delicious mock duck wok dish that is both easy and quick to prepare.

Ingredients

  • 200 g mock duck (can be bought canned or at Asian specialty stores)
  • 2 tbsp oil
  • 3 cloves garlic, finely chopped
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 2 spring onions (scallions), sliced
  • 100 g bean sprouts
  • 50 g cashews
  • Fresh cilantro for garnish
  • Cooked jasmine rice for serving

Mock Duck sauce

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce (vegetarian version)
  • 1 tbsp brown sugar
  • 1 tsp chili flakes
  • 2 tbsp water

Method

  1. Drain the mock duck and cut it into bite-sized pieces.
  2. Mix all the ingredients for the sauce in a bowl until the sugar has dissolved.
  3. Heat the oil in a large pan or wok over medium heat. Add the garlic and cook for one minute until fragrant.
  4. Add the mock duck pieces and fry until well browned.
  5. Add the bell pepper strips and cook for a further 2–3 minutes.
  6. Pour the sauce over the mock duck and vegetables, and let it simmer for 2 minutes until the sauce has thickened.
  7. Add the spring onions, bean sprouts and cashews, and toss everything together.
  8. Remove the pan from the heat, garnish the dish with fresh cilantro, and serve immediately with cooked jasmine rice.

Tips for mock duck recipe

For extra flavor you can add a splash of fresh lime juice and a sprinkle of toasted sesame seeds just before serving. If you want a gluten-free version, make sure to use gluten-free soy sauce and oyster sauce.
