Somen are the thinnest of all Japanese noodles. They are almost like vermicelli and are quick to prepare. The organic Somen noodles from Hakubaku are made from a hard organic wheat that gives a different texture and bite.
Somen is often served cold in Japan. In the hot summer months it is even served in ice water with a dipping sauce. Somen can also be added to stir-fries, cold salads and soups, including the famous Vietnamese noodle soup, pho.
Preparation:
Put the noodles into boiling water for 2–3 minutes. Then rinse in cold water and drain well before use.
