It's important to be able to get hold of the right vegetables and fruits when you venture into Asian cooking. They have a different flavor and add a depth and nuance to the dishes that typical Danish ingredients can't quite match.

Try sweet tamarind or exciting Chinese cabbage

Due to the different climates, there is typically a large difference between the fruit and vegetables available in Denmark and those available in Asia. A wide range of exotic types of plants are included here, such as the sweet-and-sour tamarind or Chinese cabbage — a type of cabbage used in China, Japan and South Korea. The cabbage is used, among other things, in the fermented dish kimchi or as an ingredient in a good stir-fry.

Tamarind is a pod-like fruit that somewhat resembles a brown pea pod. The flavor is described as a mix of lime and plums, and in the pulp you also find some black seeds that are not eaten. If you pick tamarind before it is fully ripe, the taste will be much more tangy — almost bitter and sour. This unripe tamarind is often used in savory cooking, whereas the ripe, sweet tamarind is used for candy and desserts. Tamarind is also available as a paste or sauce that can be used to marinate meat and other foods.

Bean sprouts and Chinese radish - Two exotic ingredients
